INGREDIENTS
1 pound of ground beef
2 garlic cloves
¾ cup sliced green onions
2 cups cheddar cheese
2 cans black beans, rinsed and drained
1 cup sour cream
1 cup sliced ripe olives
¼ tbsp cornstarch
Pastry for double-crust pie
1 jar thick and chunky picante sauce
1 tbsp fresh parsley
1 tsp paprika

INSTRUCTIONS FOR SPICY BEEF PIE
- In a large skillet, cook beef over medium heat until beef is brown. Add garlic and cook one minute longer.
- In a bowl, combine 1 cup of picante sauce, cornstarch, parsley, paprika, salt, pepper and add olive oil.
- Fold in the beans, 2 cups of cheddar cheese, ½ cup green onions and the beef mixture.
- On a floured surface, roll dough to make two crusts to fit a 9-in. Line the pie plate with the bottom crust and fill with bean mixture. Top with remaining crust, seal and flute edges. Cut slits in the top crust.
- Bake at 425° until lightly browned, around 30-35 minutes. Let stand for 5 minutes before cutting. Garnish with the sour cream, olives and remaining picante sauce and onions.
