Steak and Sweet Potatoes Stew

INGREDIENTS

 

  • 2 pounds top sirloin steak
  • 1-2 sweet potatoes
  • 2 cups onion
  • 1 cup red bell pepper
  • 1 cup carrot
  • 1/2 cup dry red wine
  • 4 cups beef stock
  • Oil
  • Salt and pepper
  • Thyme

INSTRUCTIONS

 

  1. Season the top sirloin steak generously with salt and pepper.
  2. Heat 2 tbsp. of oil on high heat in a heavy duty pot.
  3. Place steak in the pot and cook 7 to 10 minutes for medium rare to medium doneness, turning occasionally. Remove steak from the pot and let rest. Reduce heat to medium and add an additional tbsp. of oil.
  4. Add the onion, carrot and red bell pepper diced to the pot sautéing for 2-4 minutes.
  5. Stir in wine, the beef stock, the thyme and steak diced in cubes. Bring to a boil and reduce heat and simmer until beef is very tender, about 30 minutes.
  6. Stir in sweet potatoes diced in cubes and simmer until potatoes are just tender and stew has thickened, about 20 minutes.
  7. Remove and discard thyme and stir in parsley and season with salt and pepper, to taste.
  8. Just serve and eat!
