Sirloin with Orange Sauce

INGREDIENTS

1 beef sirloin

4 medium oranges

2 tablespoons of brown sugar

1 tablespoon of white vinegar

1 teaspoon of cornmeal

2 small onions

Olive oil

Ground black pepper

INSTRUCTIONS

  1. Cut and squeeze the juice of 4 oranges. Reserve 250ml in a separate container.
  2. Take a saucepan and add the squeezed juice, along with the brown sugar and white vinegar. Leave this mixture on the fire for 5 minutes and stir until the brown sugar dissolves and creates a homogeneous mixture.
  3. To thicken, add a tablespoon of cornmeal and let the mixture cook over medium heat for another 10 min. When we see the appropriate thickness, remove the sauce from the heat and reserve it.
  4. Now peel and cut the onions into small pieces. Once this is done, toss them in the pan with a little oil and leave them until golden brown. Reserve
  5. Prepare the beef fillets. Season them on both sides, and later put them in the same pan in which we have cooked the onions. Cook them over medium heat for a few minutes until they are golden brown on both sides.
  6. In the pan with the fillets add the juice that we had reserved at the beginning and the golden onions. Make sure everything absorbs the flavors and mixes correctly, becoming thick and homogeneous.
  7. Cook over low heat for about 15 minutes with the pan lid on.
  8. Test and rectify the salt point.
  9. Finally, serve the fillets and top them with the thick sauce. Ready to eat!
