Ultimate Chuck Steak with Peanut paste recipe
INGREDIENTS
1300 g of Chuck flap
250 g of peanut paste
1 medium sized onion
2 units of star anise
1,5 garlic cloves
½ Cayenne pepper
6 coriander branches
½ teaspoon of cumin
2 cloves
½ laurel leaf
6 g of pepper
350 ml of veal stock
1 spoon of sugar

Cooking time:
12 hours and 20 minutes
INSTRUCTIONS
- Stir-fry the onion with the garlic until the onion gets a slight brown colour. Add the peanut paste and the veal stock, grind up and let it boil for 2 minutes.
- Add the spices, leave at low heat for 15 minutes to assemble. Take off the heat and when is lukewarm add the meat.
- Let marinate for 12 hours, sear and serve immediately.
