500 gr Hanger Steak Fresh coriander Pine nuts Chicken butter Salty soy sauce Sugar
White part of leeks Minced garlic Sesame seeds Sesame oil Nashi pear juice

INSTRUCTIONS
- Cut the heanger steak, remove the central nerve.
- Leave the whole steaks and marinate them.
- Brown the steak quickly.
- Leave the steaks to stand.
- Mix the pears and filter the juice.
- Mix the soy sauce, the pear juice, a bit of sugar, some minced garlic, the sesame seeds and some drops of sesame oil.
- Let the mix to stand.
- Wash and cut the fresh coriander.
- Roast a but the pine nuts in the oven and cut them in half.
- Cook an egg yolk at low temperature.
- Mix and season.
