500 gr Hanger Steak Fresh coriander Pine nuts Chicken butter Salty soy sauce Sugar

White part of leeks Minced garlic Sesame seeds Sesame oil Nashi pear juice

INSTRUCTIONS

  1. Cut the heanger steak, remove the central nerve.
  2. Leave the whole steaks and marinate them.
  3. Brown the steak quickly.
  4. Leave the steaks to stand.
  5. Mix the pears and filter the juice.
  6. Mix the soy sauce, the pear juice, a bit of sugar, some minced garlic, the sesame seeds and some drops of sesame oil.
  7. Let the mix to stand.
  8. Wash and cut the fresh coriander.
  9. Roast a but the pine nuts in the oven and cut them in half.
  10. Cook an egg yolk at low temperature.
  11. Mix and season.
