Beef and Seasonal Products: a Recipe for Each Season

Buying seasonal fruits and vegetables is always cheaper and is also good for the environment. There is so much to choose from that you can always find new combinations for your meat dishes.

In this post, we are going to give you some ideas about the seasonal products that you can find in each season and we will suggest a recipe for each time of the year. Ready for a delicious culinary journey?

Spring: Roast beef salad with arugula, strawberries, mozzarella and balsamic vinegar recipe

Some of the seasonal products that you can find in spring are: avocados, lemons, oranges, kiwis, celery, cauliflowers, cabbages, spinach, lettuce, artichokes, peas, carrots, cherries, arugula and strawberries.

A good recipe for spring is this roast beef salad with arugula, strawberries, mozzarella and balsamic vinegar.

Ingredients (for the Roast Beef):

1 round roast

¼ cup olive oil

2 garlic cloves

salt

1 teaspoon black pepper

1 tablespoon thyme leaves

1 tablespoon rosemary

Ingredients (for the Salad)

Arugula

1 cup strawberries

½ mozzarella

Olive oil

Balsamic vinegar

Instructions:

Preheat oven to 450º. Combine two garlic gloves, minced, the oil, the herbs, the salt, and the pepper in a bowl. Then rub the mixture all over the roast.

Put the roast in the oven in a roasting pan. Roast for 15 minutes, then reduce the heat to 325º and roast between 1 hour and 45 minutes to 2 hours, depending on if you want the roast beef medium or well done.

Let it rest at least 15 to 30 minutes before cutting the beef. While it rests, cut the strawberries and the mozzarella. Mix everything and dress it with olive oil and balsamic vinegar.

Summer: homemade beetroot tortillas with minced meat and vegetables with alioli sauce recipe

Some of the seasonal products that you can find in summer are: courgettes, cucumbers, peppers, cherries, raspberries, strawberries, watermelons, garlic, lettuce, potatoes, carrots, peaches, blackberries, pears, aubergines, beets and figs.

These homemade beetroot tortillas with minced meat and vegetables are served with an alioli sauce that is delicious. They are a perfect fresh recipe for summer.

Ingredients (for the Beetroot Tortillas):

200 g corn flour

1 beet

Salt

The water from cooking the beets (at least 500 ml)

Ingredients (for the Filling)

Ground beef

Lettuce

Avocado

Corn

Garbanzo beans

Mint leaves

Spices to taste

Ingredients (for the Alioli Sauce)

½ garlic glove

Salt

Olive oil

1 egg

Vinegar

Instructions:

Boil the beetroot until soft. This can take a half hour or 40 minutes. Drain the beetroot (without throwing away the water, because it will be used for the dough), peel it and cut it into small pieces.

Put the cornmeal and salt in a bowl, mix well and while the water cools to lukewarm, mash the beets with a little of the water until you have a fine paste. It is advisable to pass it through a sieve to remove any remaining lumps.

Add the beetroot paste to the flour and salt mixture and 200 ml of the cooking water.  Mix with your hands.

Add another 100 ml of water and check the texture, adding more water if necessary. You’ll know it’s ready when you can take some of the dough, roll it into a ball, flatten it hard, and check that the edges don’t have any cracks.

Shape the tortillas, put them in a pan and cook them on the grill for a couple of minutes on each side.

For the sauce, put the minced garlic, the egg, a little salt, the oil and a splash of vinegar in the blender. Beat as if it were mayonnaise.

For the filling, cook the minced meat with a little salt and the spices you prefer and cut the rest of the ingredients to taste. Instead of filling the tortillas yourself, you can put all the ingredients on the table and let everyone put on whatever they want.

Autumn: couscous bowl with veal, vegetables and lime and ginger vinaigrette recipe

Some of the seasonal products that you can find in autumn are: pumpkins, raspberries, pomegranates, figs, apples, peaches, blackberries, pears, tomatoes, grapes, eggplants, lettuce, onions, corn, cucumbers, peppers, leeks, carrots, sweet potatoes, broccoli, kiwis, cabbages, radishes, beets, lemons, limes, tangerines, oranges, avocados, mushrooms, cauliflowers, spinach and turnips, red cabbages.

An original and delicious recipe for autumn is this bowl of couscous with veal, vegetables and lime and ginger vinaigrette.

Ingredients:

2 Beef steaks

300g Couscous

1 avocado

3 radishes

½ cucumber

¼ red cabbage

3 tomatoes

Almonds

Ingredients (for the vinaigrette):

80g olive oil

30ml lime juice

Lime zest

Grated ginger

1 garlic glove

1 tablespoon honey

Instructions:

Cook the couscous as usual. Cook the steaks on a pan until they are medium or well done and let the meat rest.

Chop all the other ingredients. You can mix the veggies with the couscous and then put the steak, finely cut, above it with the vinaigrette or you can put the cuscus on the bottom, then place the meat and all the veggies on top for a nice presentation and finally add the vinaigrette.

For the vinegarette, you have to put the oil, the lime juice, the lime zest, the grated ginger and garlic, and the honey in a bowl.  Mix well without emulsifying and correct if necessary by adding a little more oil and even a pinch of salt.

Winter: beef sirloin with orange sauce recipe
