Glazed U.S. Beef Short Ribs
													INGREDIENTS
Short ribs
23 Kg U.S. bone-in Short Ribs
15 g salt
8 g freshly grounded black pepper
20 g dried coriander powder
5 g anise powder
7 g paprika
5 g garlic powder
5 g ginger powder
Glaze
60 g honey
100 g brown sugar
50 ml apple vinegar
150 g chopped tomatoes, canned
15 ml Worcestershire sauce

				INSTRUCTIONS
- Mix all the spices in a bowl.
 - Rub the U.S bone-in short ribs with the spice mix. Set aside at room temperature for 1 hour.
 - Preheat the oven to 120°C (or 250°F)
 - Cook the ribs for 3 ½ hours.
 - Remove the ribs from the oven, brush with the glaze and cook for another 30 minutes.
 
Glaze
- Mix all the ingredients in a saucepan and cook on medium to low heat until thickened.
 
Serve this sticky and tender U.S. short rib rack with corn on the cob and a country style potato salad!
