Beef Skewers with Garlicky White Bean Dip
INGREDIENTS
- 450 g U.S. boneless beef steak
- 1 teaspoon garlic and pepper seasoning
- 1/4 teaspoon smoked paprika
White bean and garlic dip:
- 1 can of white beans
- 2 tablespoons water
- 1 tablespoon balsamic vinegar
- 1 tablespoon + 2 teaspoons olive oil
- 1 clove garlic
- 1/2 teaspoon salt
- 1/2 teaspoon smoked paprika

INSTRUCTIONS

To prepare the white bean and garlic dip, place the beans, water, vinegar, 1 tablespoon of olive oil, garlic, and salt in a food processor or blender. Blend until smooth. Transfer half of the dip to a clear bowl; sprinkle with 1/4 teaspoon smoked paprika and drizzle with 1 teaspoon oil. Add the remaining dip, another 1/4 teaspoon smoked paprika, and 1 teaspoon oil. Set aside.

Soak sixteen 15 cm bamboo skewers in water for 10 minutes; drain. Meanwhile, cut the meat into thin 0.5 cm strips. Thread the meat onto the skewers in a zigzag pattern. Mix the garlic and pepper seasoning with 1/4 teaspoon smoked paprika and sprinkle evenly over the meat.

Place the skewers on an oven tray with a rack, positioning them 5–7 cm from the grill. Roast for 4–5 minutes, turning once, until medium (60°C) or medium-well (70°C). Serve with the white bean dip.
