INSTRUCTIONS

  1. To prepare the white bean and garlic dip, place the beans, water, vinegar, 1 tablespoon of olive oil, garlic, and salt in a food processor or blender. Blend until smooth. Transfer half of the dip to a clear bowl; sprinkle with 1/4 teaspoon smoked paprika and drizzle with 1 teaspoon oil. Add the remaining dip, another 1/4 teaspoon smoked paprika, and 1 teaspoon oil. Set aside.

  2. Soak sixteen 15 cm bamboo skewers in water for 10 minutes; drain. Meanwhile, cut the meat into thin 0.5 cm strips. Thread the meat onto the skewers in a zigzag pattern. Mix the garlic and pepper seasoning with 1/4 teaspoon smoked paprika and sprinkle evenly over the meat.

  3. Place the skewers on an oven tray with a rack, positioning them 5–7 cm from the grill. Roast for 4–5 minutes, turning once, until medium (60°C) or medium-well (70°C). Serve with the white bean dip.

    Enjoy!
